Chocolate Chip Oatmeal Matcha Muffins

I’ve been having a lot of fun experimenting with a new-to-me ingredient lately…

Matcha powder!!

But, as with every new/special ingredient, I’m always a little bit hesitant to use it. I don’t want to waste it! Or use it on a recipe that I don’t love! Or use it up too quickly and not appreciate it! You’d think I had the last known container of matcha powder in the world:D

Even though I know I could always get more,  I’ve been using my matcha powder sparingly. I’ve made two batches of coconut matcha hot chocolate, two or three matcha cake-in-a-mugs, and THESE MUFFINS! 

These muffins have all the qualities that muffins should have. They’re light and fluffy, semi-healthy (oatmeal!), and loaded with chocolate chips!

I had kind of hoped that these would be a bit more green for St Patty’s Day, but they’re not. And come to find out, I like muffins (green or otherwise) more than I care about eating green food for St Patrick’s Day! 

So make these now because they’re delicious or make these on St Patrick’s Day because they’re kind of green, but definitely make them!

Chocolate Chip Oatmeal Matcha Muffins


  • 1 cup oats (old-fashioned or quick)
  • 1 cup coconut milk
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 egg
  • 1/4 cup butter, softened or melted
  • 1/4 cup brown sugar
  • 3 tsp matcha powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup mini chocolate chips


  1. Preheat oven to 350 degrees F. Place muffin liners in muffin pan.
  2. Add oats and milk to large bowl and mix (the oats will soften a bit as you add other ingredients)
  3. Add the rest of the ingredients and mix well.
  4. Scoop batter into muffin liners.
  5. Bake for 15 mins or until an inserted toothpick comes out clean.
  6. Remove muffins from muffin tin as soon as they come out of the oven (I read that leaving them to cool in the muffin tin makes the tough).
