Trail Mix Muffins

Things are about to change here at the Torres household. 

At some point in May, a new member of the family will be arriving and will be mixing everything up. Everything. 

Mr. Torres and I don’t even know what to expect. Chaos? Pandemonium? A giant stockpile of delicious muffins?

Maybe we can skip the first two, but the muffins are a reality as of this morning.

I’ve spent the last week or so filling our freezer with food for after Kung Fu Panda (aka our very active baby) arrives:)

This morning’s goal was to tackle breakfast. We usually alternate between smoothies and baked oatmeal, so these tasty and nutritious muffins will be perfect for our oatmeal days!

Trail Mix Muffins

Verdict: These dense little muffins are full of nutrients for starting your day off right! They come together easily and will be a snap to defrost in the microwave for breakfast. Mr. Torres hasn’t tried them yet, so I can’t share his thoughts, but I have a pretty good feeling that I won’t hear any complaints:)

Trail Mix Muffins

Prep Time: 20 minutes

Cook Time: 15 minutes

Yield: Makes 12 muffins


  • 1/4 cup quinoa
  • 1/2 cup water
  • 1/2 cup granola
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 Tbs brown sugar (optional)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 ripe banana, mashed
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup peanut butter
  • 2 Tbs oil (any type, I used coconut)
  • 1/2 tsp vanilla
  • 1/4 cup raisins
  • 1/4 cup dried cranberries
  • 1/4 cup chopped nuts
  • 1/4 cup mini chocolate chips


  1. Add the quinoa and water to a small saucepan and cook until water has evaporated (approx 12 mins).
  2. Preheat oven to 375 degrees F.
  3. Grease muffin tin or add liners.
  4. Mix all ingredients together in a bowl.
  5. Add mix to muffin tin.
  6. Bake for 15 minutes.
