Chocolate Peanut Butter Banana Crisp

I saw a recipe for banana crisp a few weeks ago and thought, “Hmm, I like bananas. I like crisps. I need to try this!”

And then I promptly forgot all about the recipe until I saw these two slightly over-ripe bananas sitting on my counter.

They were just begging to be put into a crisp. I’m not one to argue with my food, so I obliged and began to get out the ingredients.

As I was doing so, I realized that as good as banana crisp sounds, it sounds even better as banana crisp with vanilla ice cream on top! Except we didn’t have any vanilla ice cream. All we had was peanut butter chocolate moosetracks…Wait, all we had was ice cream with peanut butter and chocolate in it. Peanut butter + chocolate + banana = pure goodness. Put a crispy oat layer on top and cook it in the oven to make it warm and gooey = extreme pure goodness!

Say goodbye to the idea of making plain old banana crisp!

The recipe is really quite simple if you’ve made a crisp of any kind before. If not, well, it’s still pretty simple.

First things first, cut up two bananas and place them in the bottom of two little dishes (any type of oven-safe dish will work).

Next, mix up the dry ingredients in a separate bowl.

The next step is the only one that takes a little bit of skill. After mixing up the dry ingredients, the butter and peanut butter needs to be cut in. Which just means it needs to be combined with the dry mixture without being evenly mixed. You want little pieces of butter that are evenly coated with the flour mixture. Here’sĀ a good explanation of what needs to happen and different techniques for doing so. I don’t have a pastry blender, so my top pick is two butter knives. It’s not hard, just chop that butter and peanut butter up into little pieces!

We have the bananas. We have the peanut buttery oat goodness. Now it’s time for chocolate! Mix the chips in with the topping and spread it on top of the bananas!

In the oven it goes and *voila* out comes the most decadent crisp that I have ever encountered.

And by all means, don’t forget the ice cream!

Verdict: The beauty of this recipe is that it is so easy and involves ingredients that are common staples. Plus, if you take into account that peanut butter, oats, bananas and, chocolate (to some extent) are all helth foods, this is one of those desserts that you can eat 100% guilt free! Well, maybe not 100%, but close to it! Mr. Torres and I each attempted (after finishing our crisps), that this recipe probably makes closer to four servings instead of just two, but you live and you learn. And, then again, sometimes you just live and enjoy and eat the whole thing!
