Happy Mardi Gras! 

Mr. Torres and I celebrated today by stopping in for donuts this morning on his way to work:)

We probably have donuts something like three times a year, so it was a real treat!

Strawberry Chocolate Cheesecake

Two months in and I’m still holding up my end of the worst deal I think I’ve ever made!

Fortunately, it’s a deal that benefits me, as well.

Although I don’t usually find myself making a cake every month, it hasn’t been too terrible having something besides ice cream for dessert:)

February’s cake was the dessert for our Valentine’s dinner and ended up being just perfect!

I made the actual cheesecake the day before and then added the chocolate ganache and strawberries the day of.

Easy peasy!

Verdict: I don’t think Mr. Torres has ever met a cheesecake that he didn’t like and this one was no exception! I really enjoyed this cheesecake because it stuck to the basics. Sometimes the desserts I make tend to get a little complicated with lots of layers and flavors, but this one kept it simple and delicious! And it was easy to make! Plus, it looks impressive with the strawberries all arranged on top. This one’s a winner!

February’s Cake: Strawberry Chocolate Cheesecake


  • Cheesecake
  • 1 cup graham cracker crumbs
  • 2 Tbs butter, melted
  • 3 packages (8 oz) cream cheese, room temp
  • 1 cup sour cream, room temp
  • 2 tsp vanilla
  • 1 cup sugar
  • 2 Tbs flour
  • 4 eggs
  • Ganache
  • 8 oz chocolate (I used semi-sweet)
  • 1 cup heavy whipping cream
  • 1 Tbs butter, room temp
  • Strawberries


  1. Heat oven to 350* F
  2. For the crust, combine the crumbs and butter in a small bowl and mix
  3. Press onto the bottom of a greased 9 inch springform pan
  4. Bake for ten minutes and allow to cool
  5. For the cheesecake, beat the cream cheese, sour cream and vanilla until smooth
  6. Add the sugar and flour and mix
  7. Add eggs while mixing on low until just combined
  8. Pour into crust and bake for one hour or until center is just almost set
  9. Cool for an hour and then refrigerate overnight
  10. For the ganache, allow the heavy cream to heat to a boil in a saucepan
  11. Pour hot cream over chocolate in a separate bowl and allow to sit for one minute
  12. Whisk until smooth
  13. Add butter and whisk until completely smooth
  14. Pour ganache over cheesecake and cool in refrigerator
  15. Add strawberries in radiating pattern shortly before serving
