Jelly rolls are only okay in my book. 

The end results tastes about the same as a shortcake with fruit and Cool Whip on top, but is a bit more complicated to assemble.Don’t get me wrong, they taste good! I’m just not a fan of adding steps in a recipe just so that the final product has a slightly better (maybe) presentation. 

Thus, the three stars for this recipe. Tasty, but not worth the hassle. Just make strawberry shortcake! Or bake the angel food cake that is used in this recipe and add your strawberries and Cool Whip to that!

Strawberry Fig Jelly Roll


  • 1 boxed angel food cake mix
  • 8 oz strawberries, sliced
  • 1 box vanilla pudding mix (plus ingredients to make pudding)
  • 1 small jar fig jam (you could also use strawberry or whatever you have on hand)
  • 1 container Cool Whip


  1. Bake the angel food cake as directed on the box using a jelly roll pan (or a baking sheet with sides).
  2. Prepare the vanilla pudding as directed on the box.
  3. Allow the angel food cake the cool.
  4. Spread the jam onto one side of the angel food cake.
  5. Add the pudding on top of the jam.
  6. Layer the sliced strawberries onto the pudding.
  7. Roll the cake while trying to keep all the fillings inside ( least for me!).
  8. Chill in the refrigerator and serve with Cool Whip.
